BEEF:
Thyme, bay leaf, and instant minced onion
Ginger, dry mustard, and garlic powder
Dill, nutmeg, and allspice
Black pepper, bay leaf, and cloves
Chili powder, cinnamon, and oregano

PORK:
Caraway seed, red pepper, and paprika
Thyme, dry mustard, and sage
Oregano and bay leaf
Anise, ginger, and sesame seed
Tarragon, bay leaf, and instant minced garlic

FISH and SEAFOOD:
Cumin and oregano
Tarragon, thyme, parsley flakes, and garlic powder
Thyme, fennel, saffron, and red pepper
Ginger, sesame seed, and white pepper
Coriander (cilantry), parsley flakes, cumin, and garlic powder

POTATOES:
Dill, onion powder, and parsley flakes
Caraway seed and onion powder

Here are some of my favorite rubs:

Karl's Rub # 1

   1 T chili powder
   1 t salt
1/2 t Mexican leaf oregano
1/2 t crushed coriander seeds
   4   New York strip steaks 

Combine all ingredients except steak. 
Rub onto steaks; refrigerate 2 hours before grilling. 
Grill on covered grill over medium-hot Kingsford briquets 7 to 10 minutes,
or to desired doneness, turning once.

    6  t SALT
    1  t LEMON POWDER
2-1/2  t BLACK PEPPER
    6  t SUGAR
    2  t MSG
    1  t PAPRIKA

    6 T sugar
    1 T dry lemon powder
    2 T MSG or other pep powder
2 1/2 T black pepper
    2 T garlic powder

2-1/2 T dark brown sugar 
    2 T paprika 
    2 t dry mustard 
    2 t onion powder

1-1/2 t dried sweet basil 
    1 t ground bay leaves

  3/4 t ground savory 
  3/4 t dried thyme 
  3/4 t freshly ground black pepper 
  3/4 t white pepper 
  1/8 t ground cumin 
        Salt, to taste

   2  Tablespoon    paprika
   1  teaspoon      ground red pepper
   1  teaspoon      garlic powder
   1  teaspoon      onion powder
   1  teaspoon      salt
 1/4  teaspoon      black pepper

Mix all ingred

   1      tablespoon    dried ground chipotle
   2      tablespoons   Hungarian paprika
   2      tablespoons   brown sugar
   4 1/2  teaspoons     thyme
   4 1/2  teaspoons     cinnamon
   1 1/2  teaspoons     nutmeg
     1/2  teaspoon      ground habanera
   2                    lemons peel ( powdered)

Combine all ingredients

    1 t Dried Bay Leaves 
  3/4 t Ground Coriander

  1/8 t Ground Cummin 
    1 t Cayanne Pepper
  1/2 t ground cloves
    1 t Adobo
    1 t of Pickling spices (powdered)
  1/2 t Salt

 Place all the above into a blender and mix well
